Former Zuma chef, manager to open KYU restaurant in Wynwood

Chef Michael Lewis and GM Steven Haigh are partners in a new concept in the former Shikany space.
An Asian-inspired Miami restaurant is opening in mid-February in the former Shikany space in Wynwood.
KYU, 251 25th St., is the first independent project from former Zuma chef Michael Lewis and general manager Steven Haigh.
“Opening this restaurant is a lifelong dream of mine, and I cannot think of a better partner than Michael,” Haigh says. “We are so proud to call Miami home and excited to be a part of its ever-evolving culinary scene. The city’s growth is remarkable.”
KYU’s menu will focus on wood-grilled Asian specialties with a smack of low-and-slow American barbecue sensibilities: duck breast burnt ends with yuzu pickles, wagyu beef brisket with shichimi spices, etc. The grill will serve as the centerpiece of KYU’s open kitchen.
In a nod toward sustainability, KYU will use an Orca composter to break down its food waste and is committed to planting trees to help offset its wood and charcoal usage.
